Culinary Institute of America alumnus Scott Conant has opened multiple restaurants during his nearly 30-year career, including his newest venture, the Italian steakhouse Cellaio at Resorts World Catskills in New York. “If someone wants a bowl of pasta and a glass of wine at the bar, you have to make that just as appealing as a blowout celebratory dinner with magnums of champagne,” he said of the lessons he’s learned about resort dining.
